Blueberry Bliss Cake Raw Food Recipe


Blueberry Bliss Cake is one of the most decadent desserts ever. "Raw Food" never tasted this good.
Roslyn Uttleymoore shares her famous "Raw Food Recipe" Blueberry Bliss cake - dessert that she developed for her Raw Food Classes. Sadly she no longer runs these classes, but you get to benefit from the recipes for free.
This recipe is definitely NOT a "Low Fat" meal, but enjoy it anyway.

Recipe

Blueberry Bliss -- Raw Cake

Crust:

1C walnuts

2C pitted dates soaked

Method

Place dates and nuts in a food processor and blend until smooth

Filling:

3 cups blueberries [fresh or frozen]

1 1/2 cups macadamia nuts

1/2 cup pure maple syrup

2 tablespoons lemon juice

2 teaspoons ground cardamom or to taste

1/2 teaspoon pure vanilla extract

Pinch of salt

3-4 tablespoons melted coconut cream

Method

Place all ingredients in a food processor and blend until smooth

Spread crust into a pie dish or spring form cake tin

Layer filling mix over crust

Place in fridge or freezer to set

Decorate with fresh blueberries, or seasonal fruit of choice and edible flowers

NB: This is not a low fat recipe

Crust variations: Macadamia nuts & dried apricots, Pecan nuts & dried pineapple, Walnuts & raisons, Almonds & dried figs. Add cacao nibs &/or powder.
