Cardamom falls on lower demand

Cardamom prices fell by 0.85 per cent on Friday at the Multi Commodity Exchange (MCX) due to the adequate stocks availability in the physical market on account of higher supply from the producing belts of Chandausi in Uttar Pradesh.

Sentiment weakened further as the traders booked profits at the prevailing levels in the midst of a subdued demand for the commodity.


Kerala (70 per cent), Karnataka (20 per cent) and Tamil Nadu (10 per cent) are the cardamom growing states in India while about 90 per cent of the produce is consumed within the nation. At MCX, Cardamom futures for May 2014 contract were trading at Rs. 963.50 per kg, down by 0.85 per cent, after opening at Rs. 970.10 against the previous closing price of Rs. 971.60. It touched the intra-day low of Rs. 957 till the trading. (At 3.40 PM today).

Ingredients:

Spice infused oil:
1/3 cup extra virgin olive oil, butter or ghee
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon Kalonji or Nigella seeds
1/2 teaspoon ground coriander
1/2 teaspoon cinnamon
1/2 teaspoon ground cardamom or 3 whole cardamom pods
1/2 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1/2 teaspoon sweet paprika
1/8 teaspoon black pepper
1/2 teaspoon cayenne pepper or chili flakes


Filling:
6 medium backed potatoes
1/4 cup spice infused oil
1 cup frozen peas (defrosted)
½ teaspoon Himalayan pink salt
50 gr feta cheese
1 teaspoon sumac

Wrap:
9 filo sheets (a bit less than 1 lb)
3 tablespoons extra virgin olive oil, butter or ghee
1 tablespoon sesame seeds

Yogurt Dip:
1/2 cup plain yogurt with live cultures
the rest of spice infused oil
1/2 teaspoon sumac
1 pinch of Himalayan pink salt

Makai Paneer Zafrani -- Corn and cheese with saffron sauce

All purpose flour ½ ts

Cumin seeds ½ ts

Cardamom seeds ½ ts

Garlic ½ ts

Ginger ½ ts

Green chilly 3 n

Nut Meg powder ¼ ts

Paneer 250 g

Corn ½ cup

Milk 1 cup

Spring onions 2 spr

Coriander chopped 1 b

Saffron ½ pinch

Onions chopped 2 n

Oil 2tbsp



Heat oil in a pan add cumin seeds, cardamom seeds, garlic, ginger, onions, sauté this and add all purpose flour, mix it and add milk, salt, green chilly, nut meg powder let this come to a boil then add corn (boiled), add paneer, chopped spring onions, chopped coriander, grated paneer, add saffron.

Serve this with chapattis.

Hara Bhara Subz Pulao
A medley of veggies add colour and flavour to this hot and spicy dish. Brown rice is a storehouse of various nutrients like carbohydrates, protein, vitamin A, iron etc. and when combined with veggies it makes a wholesome fibre rich meal. I am sure you will not miss the traditional fat-laden vegetable pulao once you taste this delicacy.
Preparation Time: 10 minutes. Cooking Time: 10 minutes. Serves 4.
Ingredients
¼ cup finely chopped onions
½ cup sliced potatoes
½ cup green peas
1 cup cauliflower florets
1¼ cups brown rice, soaked and drained
2 cloves (laung / lavang)
50 mm (2") piece of cinnamon (dalchini)
2 cardamom (elaichi)
2 bayleaves (tejpatta)
Salt to taste
For the green paste
2 cups chopped coriander (dhania)
¼ cup mint leaves (phudina)
1 tbsp freshly grated coconut
1 tbsp beaten rice (poha)
2 green chillies, roughly chopped
1 tsp cumin seeds (jeera)
2 tsp lemon juice
Salt to taste
For the garnish
1 tbsp finely chopped coriander (dhania)
For the green paste
Combine all the ingredients and blend in a mixer to a smooth paste using a little water. Keep aside.
How to proceed
1. Heat a pressure cooker on a high flame till it is hot.
2. Add the cloves, cinnamon, cardamom and bayleaves and dry roast on a slow flame for a few seconds.
3. Add the onions and dry roast on a slow flame for 30 seconds.
4. Add the potatoes, green peas, cauliflower, green paste, brown rice and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
5. Add 3 cups of hot water, mix well and pressure cook for 3 whistles.
6. Allow the steam to escape before opening the lid.
Serve hot garnished with coriander.

Cardamom increases on strong demand outlook

Cardamom prices rose by 2.56 per cent on Friday at the Multi Commodity Exchange (MCX) on account of good buying support from both exporters and upcountry buyers and also on hopes of improved export demand. Sentiment improved further as a result of firm demand in the market against restricted arrivals from producing belts of Chandausi in Uttar Pradesh.


Kerala (70 per cent), Karnataka (20 per cent) and Tamil Nadu (10 per cent) are the cardamom growing states in India while about 90 per cent of the produce is consumed within the nation. At MCX, Cardamom futures for May 2014 contract were trading at Rs 1058 per kg, up by 2.56 per cent, after opening at Rs. 1050 against the previous closing price of Rs. 1031.60. It touched the intra-day high of Rs. 1062.50 till the trading. (At 03.55 PM today).
