Ingredients:
Spice infused oil:
1/3 cup extra virgin olive oil, butter or ghee
1/2 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon Kalonji or Nigella seeds
1/2 teaspoon ground coriander
1/2 teaspoon cinnamon
1/2 teaspoon ground cardamom or 3 whole cardamom pods
1/2 teaspoon garam masala
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1/2 teaspoon sweet paprika
1/8 teaspoon black pepper
1/2 teaspoon cayenne pepper or chili flakes
Filling:
6 medium backed potatoes
1/4 cup spice infused oil
1 cup frozen peas (defrosted)
½ teaspoon Himalayan pink salt
50 gr feta cheese
1 teaspoon sumac
Wrap:
9 filo sheets (a bit less than 1 lb)
3 tablespoons extra virgin olive oil, butter or ghee
1 tablespoon sesame seeds
Yogurt Dip:
1/2 cup plain yogurt with live cultures
the rest of spice infused oil
1/2 teaspoon sumac
1 pinch of Himalayan pink salt
