Spicy and Vanilla flavoured Stewed Apples



How to make spicy and vanilla flavoured stewed apples? Here’s the easy recipe !

Ingredients :
- 4 apples
- 2 teaspoons spices mix
- 2 teaspoons vanilla powder
- Brown sugar

The spices mix contains cinnamon, cardamom and star anise.
If you don’t have vanilla powder, you can use vanilla pod halved lengthwise and scraped.

Recipe :
1) Peel and cut the apples
2) Brown the apples with butter
3) Add brown sugar
4) Add spices mix and vanilla powder
5) Cook until the stewed apples’ consistency you like
6) Enjoy ! :-)

Banana Rye Pancakes - Snow Day

Banana Rye Love Pancakes (serves 2 people)
1/4 cup oats
1/4 cup rye flour
1 tsp baking powder
1/4 tsp cardamom
1/4 tsp cinnamon
1/4 tsp salt
1 ripe banana
2 eggs
1 tbsp vegetable oil

Grind up the oats and rye flour in a food processor or coffee grinder so they are a fine powder. Add the baking powder, cardamom, cinnamon, and salt.

In a separate bowl, mash up the banana and whip in the eggs and vegetable oil. Pour the powder in and stir until combined.

Cook up in a pan with some butter, cooking each side for 1-2 minutes until golden brown. Serve with maple syrup or jam.

Baking traditional Finnish buns



Hey everyone! Today I wanted to share you a traditional dessert, which we eat on Pancake day in Finland. It’s called laskiaispulla and in this video I’m trying out some new fillings to go inside the bun. The traditional fillings that we usually have are whipped cream with jam or almond paste. 
Everything went well until I baked the buns in the oven and they bruned from the bottom… Well I’m not a professional baker so it’s okay. They still tasted good when I removed the burned part!

So here’s the recipe for the buns:
Buns (about 20)
Ingredients:
5 dl of milk or water (Hand temperature)
1 yeast
1 teaspoon of salt
2 dl of sugar
1 tablespoon of cardamom
150g of butter
12-14 dl of flour
1 egg
1 egg and 2 tablespoons of milk (for greasing)

Baking:
Mix the milk/water (hand temperature) with the yeast. 
Add sugar, salt and cardamom.
Add 1/3 of the flour 
Add melted butter to the mixture
Add the rest of the flour
Let it rise for about 30 minutes
Heat the oven to 200 degrees (celsius) 
Roll the mixture (after rising) to round buns
Let them rise for about 10 minutes before greasing
Sprinkle sugar crystals on top of the buns
Bake in the oven for about 10-15 minutes

NOTE! I used coconut flakes instead of sugar crystals and I used only 1 egg for greasing.
To add the filling you must cut the buns in half after baking!

Now to the fillings! 
I always used this ”whipped cream” as a base in all of my fillings:
Mix Coconut cream and 1 teaspoon together with an electric mixer.

”Traditional” bun with a twist:
1. Make the whipped cream
2. Cut the bun in half
3. Put about one teaspoon of jam (I used rasberry jam) in the middle
4. Add the "whipped cream" 
5. Put the lid on
Blueberry smoothie:
1. Put the blueberries, "whipped cream", milk and yogurt to a blender and mix them 
2. Add into the bun
Tip! the more yogurt you add, the thicker smoothie will be

Banana-coconut filling:
1. Add in mashed banana(1 banana), honey (1tablespoon) and the coconut flakes (1 tablespoon) to the whipped cream
2. Mix well
3. Put into the bun

Chai Cupcakes | Sanjeev Kapoor Khazana

CHAI CUPCAKES

Ingredients

¼ cup tea decoction (chai)
½ cup refined flour
55 grams butter
100 grams castor sugar
1 teaspoon vanilla essence
1 egg
1 teaspoon baking powder
Edible colourful sprinklers
Frosting
140 grams icing sugar
50 grams butter
¼ teaspoon grated ginger
¼ teaspoon cinnamon powder
¼ teaspoon green cardamom powder

Method

1. Preheat oven at 180º C. Line a baking tray with paper cupcake moulds.
2. Cream together butter, castor sugar and vanilla essence in a bowl using an electric beater. Add egg and whisk.
3. Sieve together flour and baking powder and whisk. Add tea concoction gradually and whisk well.
4. Fill a piping bag with prepared mixture. Pipe it out in a paper cupcake moulds and tap.
5. Place the baking tray in preheated oven and bake for 10-15 minutes. Remove from oven and cool.
6. To prepare frosting, combine butter, ginger, cinnamon powder and cardamom powder in a bowl and whisk. Add icing sugar and whisk well.
7. Fill a piping bag with frosting fitted with a star nozzle and pipe it out on cupcakes.
8. Serve garnished with edible sprinklers.
