Chicken Curry with Spinach

Ingredients:

Chicken – 2 lbs boneless, skinless thigh, bite-size pieces

Spinach – 16oz pkt, frozen chopped
Tomatoes – 6 medium tomatoes, finely chopped
Oil – 4 tsp
Black Cardamom – 1
Cinnamon – 1” stick
Green Cardamom – 2
Bay Leaves – 2
Cloves – 4
Onions – 1 large, finely chopped


Ginger – 2 tsp (heaped)
Garlic – 5 cloves, finely chopped
Green Chilies – to taste
Salt – to taste
Red Chili Powder – ½ tsp
GaramMasala – 1 tsp
Cumin Powder – 1 tsp
Coriander Powder – 1 tsp
Curry Powder – 1 tsp

Method:
Heat oil in a medium, non-stick wok on medium to high flame.
Once the oil is hot, add the Bay leaves, Cloves, Cinnamon and the Cardamoms.
Add the Onions. Mix well, cover the wok and let it cook about 5 min (until the onions turn translucent with a touch of golden).
Add the Ginger, Garlic and Green Chili and tomatoes. Mix again and cover.

This time around, the mixture needs to cook longer but keep an eye on it and keep stirring. The key is to let it cook till the oil separates from the mixture. The mixture (masala) will reduce considerably in amount.

Add the Chicken and the dry spices (Cumin Powder, Coriander Powder, Salt, Red Chili Powder, Garam Masala & Curry Powder). Give it a good stir and cover.

Cook the Chicken for about 5-7 min, add in the Spinach, and yes, mix again and cover
Cook for another 10 min.

Serves 6-8.

Tips:

The first 5 steps of the recipe above are the base of a lot of North Indian cooking and it is the longest process….and the most vital. Once you have this down, you can experiment with a lot of variations to this recipe.

GaramMasala is available at any Indian, Whole Foods or Health food stores.

I am paranoid about my utensils that I use for ‘meats’ cooking….I always make sure I can put them in the dishwasher for a good, hygienic cleaning.

It is a great idea to have a separate chopping boards for your ‘veggies’ and your ‘meats’. I always put the ‘meats’ chopping board in the dishwasher after every single use.

Cardamom gains 1.5% on fresh spot demand

Cardamom futures today recovered by Rs 16.30 to Rs 1,121.80 per kg, as traders raised their positions due to a pick-up in the demand for the commodity amid low stocks.

Restricted arrivals from major growing belts amid speculations of a decline in production in current year also influenced cardamom prices in the futures market in New Delhi.

On the MCX, cardamom for May delivery added Rs 16.30 or 1.47%, to Rs 1,121.80 per kg in a business volume of 1,254 lots.
The June contract gained Rs 11.90, or 1%, to Rs 1,193 per kg in a business volume of 355 lots.
Traders said pick-up in demand in the spot market against restricted arrivals from producing regions attributed the rise in cardamom prices in the futures market.

Cardamom edges higher, sell at Rs.1205-10


April 20, 2012.

Cardamom prices are expected to continue the correction during the day on back of exporter resistance in bulk buying. Despite of fall in arrivals quality is also becoming poor which is weighing on prices.

However, unfavourable weather conditions in major growing regions are creating threat to next season crop, which might support the prices to resume uptrend in near term.

Total daily arrivals at spot auction held in Kerala were around 42,307 Kgs. on Thursday. According to traders’ estimates if weather condition remains unfavourable then it might result in 5-10% lower production in coming season.

Total arrivals during this season, from August 1 were 16,041 tonnes and sales 15,535 tonnes, against 8,732 tonnes of arrivals and 8,511 tonnes of sales in the same period last year

According to derivative analysis, prices and volumes have declined further while open interest has increased. This indicates that participation has declined. It is a good indication that a small rally against downtrend will develop creating a sell point for downtrend.

Rice Pilaf With Chicken - Easy Chicken Recipe


You can't go wrong with an easy chicken and rice recipe. The Chicken Rice Pilaf is a simple single-skillet meal, for minimum mess and maximum flavor. This one would make a great weeknight family dinner.

Ingredients
12 chicken thighs
1 1/2 cups brown rice, soaked in water for at least 8 hours
water (use as directed on rice package)
1 medium onion
2 celery ribs
1/4 cup vegetable oil
1 teaspoon paprika
salt (to taste)
pinch of white/black pepper
1/2 teaspoon chili flakes
1/2 teaspoon cinnamon
1 bay leaf
1 teaspoon ground coriander seeds
1/2 teaspoon cumin
3 cardamom pods
2 garlic cloves
Instructions
Preheat the skillet with oil to high heat.

Place chicken thighs on a skillet skin down. When the skin becomes golden brown, remove thighs to a plate.

Add onion and celery to the skillet and caramelize them for a couple of minutes.

Now add all the spices to the skillet. Mix oil with vegetables and spices and let simmer for 10 seconds.

Add to skillet chicken thighs skin side up. Add all the carrots at once and place them between the thighs.

Lower the heat to medium low and add garlic. Pop the lid on and let it cook for about 10 minutes.

After 10 minutes, add the rice in between the chicken; cover with water, pop the lid on, and let simmer for 20-30 minutes or until the rice is puffed.

Try the rice and adjust the seasoning. If the rice is not fully cooked, add 1/4 cup of water and continue to simmer.

Serve and enjoy!

Cardamom falls 2.7% on profit-booking

Cardamom prices fell further by Rs 30.10 to Rs 1,082 per kg in futures trade today as speculators engaged in booking profits at existing levels, driven by a weak trend at spot market on sluggish demand.
Adequate stocks following increased arrivals from producing regions also weighed in on the cardamom futures here.

At the Multi Commodity Exchange, the May delivery declined by Rs 30.10, or 2.70%, to Rs 1,082 per kg in business turnover of 1,765 lots.
The April contract fell by Rs 19.10, or 1.95%, to Rs 960 per kg with trading volume of 317 lots.
Market analysts said continued profit-booking by speculators at prevailing higher levels against subdued demand in the spot market mainly kept pressure on the cardamom prices at futures trade

Raspberry Coffee Cake


Ingredients:

Coffee Cake

6 Tbsp. unsalted butter, room temperature
3/4 c. white granulated sugar
1/4 c. light brown sugar, firmly packed
1 1/2 c. all- purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. table salt
1/8 tsp. ground nutmeg
1/8 tsp. ground cardamom
2 large eggs
1 tsp. pure vanilla extract
1/4 c. sour cream or plain yogurt
1/2 c. buttermilk, half-and-half, or whole milk

Streusel Topping:

6 Tbsp. unslated butter, cold and diced into 1" pieces
1/2 c. all- purpose flour
1/2 Tbsp ground cinnamon
1/4 tsp. ground nutmeg
1/8 tsp. ground cloves
1/8 tsp. ground ginger
1/4 c. light brown sugar, firmly packed
1/4 c. white granulated sugar

6 oz fresh raspberries, rinsed and drained

Directions:

Preheat oven to 350F. Place baking rack in the center of the oven. In a large bowl or electric stand mixer, cream butter and sugars together until light and fluffy. About 3-4 minutes. Add eggs into mixture one at a time and beat well after each addtion. Scrape the sides of the bowl with a rubber spatula. In a separate bowl, combine the dry cake ingredients. In another small mixing bowl, combine the cake's wet ingredients. Add 1/2 of the dry ingredients into the batter. Mix until blended on low speed. Add the wet ingredients into the batter and blend well on low speed. Add the remaining dry ingredients and blend well on low speed. Scrape the sides of the bowl with a rubber spatula and stir until smooth.

Streusel Topping Directions:

In a small mixing bowl, combine all of the dry ingredients. Add in the diced, cold unsalted butter and incorporate into the batter with a pastry cutter or fork. Mix until crumbly.

Spray a 9" springform pan with "Baker's Joy" or another nonstick spray. Add the cake batter to the prepared pan and smooth the top of the batter with an offset spatula. Tap the pan on the counter to remove any excess air bubbles.

Sprinkle the raspberries over the batter evenly. Sprinkle the streusel topping over the raspberries and batter evenly. Bake at 350F for 50 minutes or until top is golden brown and when a toothpick is inserted it comes out clean. Cool for 15 minutes before serving.

Yields 8- 10 servings

1cup fresh cilantro

1/2 a lemon peeled
1/2 cup of spinach
easy on the parsley

1 cup mixed frozen mango and peaches
1 teaspoon of cardamom
1/4 cup of almond butter
1 1/2 cup water
1 cup of ice
4 dates (if you're crazy!)

Chai Spiced Cookies

Yields: 3 dozen cookies

Ingredients:
1 pkg. Sugar Cookie Mix
¾ cup almonds, toasted and finely chopped
¾ tsp. allspice
¾ tsp. cardamom
½ tsp. cinnamon
½ cup butter, softened
1 tsp. vanilla
½ tsp. almond extract
1 cup powdered sugar




Preparation Directions:

~ Preheat oven to 350 degrees.
~ In a large bowl, stir together cookie mix, allspice, cardamom and cinnamon. Stir in butter, vanilla, and almond extract mix well.
~ Shape dough into 1-inch balls. Place balls 2-inches apart on an ungreased cookie sheet. Bake for 12 to 14 minutes or until set.
~ Gently roll warm cookies in powdered sugar; and place on cooling rack. Cool completely and roll in sugar again.
