In a large bowl combine:
1 cup flour (use gluten free if necessary)
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp ginger
1 tsp cinnamon
sprinkle each of nutmeg, cloves & cardamom,
crack of salt
1/2 cup sugar
Combine well
In a separate smaller bowl mix 1 chopped apple and 1/2 tsp cinnamon together and add to the large bowl.
In the small bowl add 1/2 cup apple sauce, 1 tsp apple cider vinegar and 1/3 cup soy milk and whisk. Add it to the large bowl of ingredients and combine.
Pour mixture into a lined cake tin and bake in the oven on 180C fan forced for 40 minutes or until cooked through.
Allow to cool in tin, and then remove and place on a cooling rack to cool completely before slicing.
