Coconut Pumpkin Spice Granola - La Cooquette




I always Fall for pumpkin: in pies, as side-dish, lunch, dinner, and for breakfast! Try my version of tasty autumny granola with this Coconut Pumpkin Spice Granola recipe. Eat in, eat out, I got you covered too with Pumpkin Spice Granola Bars ;)!

Ingredients

-2 ½ cups rolled oats
-1 cup sweetened Coconut Flakes
-¼ cup flax seeds
-½ cup of dried cranberries
-½ cup of pumpkin seeds, pepitas
-¼ cup of sunflower seeds, pipas
-2 tbsps coconut oil, melted
-2 eggs
-2 tsps vanilla
-3 tbsps maple syrup or honey
-1 tsp of poppy seeds

*The only variation between the granola bars or just the granola is in the amount of pumpkin puree you add (because I like mine chewy):

-for the GRANOLA CHUNKS: ½ cup of pumpkin puree
-for the soft and chewy GRANOLA BARS: 1 cup of pumpkin puree (+ a bit of milk if you want)

Pumpkin spice:

-½ tsp of cardamom
-½ tsp of ground cloves
-1 tsp of cinnamon
-½ tsp of ginger
-½ tsp of salt
