Tarta.se invites you to learn from a professional pastry chef how to make decadent sweet traditional Swedish pastry called "Semla". Semlas are very common in Nordic countries and recipes vary a little from country to country, yet as a general idea it is a sweet cardamom bun filled with marzipan and whipped cream that is traditionally served on Fat Tuesday and are associated with Lent.
Recipe Semla (enough for 20 buns):
200 g of water 30C*
1/2 pack of yeast
2.3 / 4 dl flour
3 dl flour
80 g butter
1 dl sugar
1/2 egg
Here's a a traditional recipe that guarantees to rekindle some good old, sweet memories. Rice cooked in the goodness of ghee, cardamom, nuts, sugar syrup and infused with the aroma of cinnamon.

1/2 Tsp Ground Cardamom
1 Tsp Ground Cinnamon
1/2 Tsp Salt
1 Tbsp Yeast (Instant)
Preparations:
1- Warm 1/4 cup water to 110º-120º F (43º-49º C).

INGREDIENTS:
6 ready made pancakes
Topping:
300g Total Greek Yoghurt
12 tbsp maple syrup
16 cardamom pods
2 bananas
Handful of raisins
Handful of walnuts
METHOD:
In a frying pan, heat the maple syrup and add the cardamom pods and sliced banana. Cook for approximately 1 minute and mix in the raisins. Serve on top of the pancake/s with a big blob of Greek yoghurt and a scattering of walnuts.
The flavour of apples is so good cooked in a cake. This is my favourite apple cake recipe. What makes it so special is the combination of cardamom and lemon. It’s also wonderfully moist. It will keep well for up to a day.
Ingredients
• 150 gunsalted butter, chopped, softened
• 220 g(1 cup) raw sugar
• 2eggs
• 150 g(1 cup) plain flour, sifted
• 1 tspbaking powder
• 60 ml(¼ cup) pouring cream, plus extra, to whip
• finely grated zest of 1 lemon
• 3-4red apples
• 2 tspcardamom pods
• shredded coconut, for coating
Cook's notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
Preheat the oven to 180°C. Grease and coat the base and sides of a 20 cm round cake tin with coconut. Set aside.
Using an electric mixer, whip the butter and 165 g (¾ cup) sugar until light and airy. Add the eggs, one by one, beating well after each addition. Mix the flour and baking powder in a bowl, then fold into the butter mixture. Fold in the cream and lemon zest, then spoon into the prepared tin.
Using a mortar and pestle, grind the cardamom, then combine with the remaining 55 g (¼ cup) sugar.
Core and cut the apples into thin wedges, then toss to coat in the cardamom sugar. Arrange the apples on top of the batter. Bake for 35 minutes or until a skewer inserted into the centre comes out clean. Meanwhile, whip the extra cream.

Ingredients:
* 2 lbs of boneless,skinless chicken thighs.
* 4 large garlic cloves- crushed.
* 1 Tbs of cardamom.
* Salt and pepper.
* 2 Tbs all spice or the mixture of 7 spices.
* 3 Tbs olive oil
Directions:
1- Start by trimming the fat of the thighs then, dice chicken thighs
to your favorite size
2-Combine garlic, salt, black pepper, all spice and ground cardamoms and olive oil
3- Stir until very well combined
4- Add the chicken and stir very well with the marinade
5- If you have time let it marinade for 2 hours or more
but it is ok to cook right away too... If you want to freeze then you should stop here
6- Over medium- high heat cook the chicken until all the liquids evaporates and it gets little golden brown.
7- Serve as a wrap or with rice or pasta.
