Saudi Mandi Rice | Smoked Sahoor Recipes



A smoky flavored dish made with a Saudi lady. This dish is traditional and easy for anyone to make at home. You will wow your guests.

INGREDIENTS
1000G CHICKEN 
1 TSP COLORED ZAHFARAN
1 TSP TURMERIC POWDER
2 TBSP SALT
1 TSP SAUDI SPICES
1 TSP SALT
3 CUPS BASMATI RICE
1 TBSP OIL OR OLIVE OIL
2 CINNAMON STICKS
5 PCS CARDAMON PODS
6 PCS CLOVES
½ CUP YELLOW RAISINS
ROASTED PINE NUTS
ROASTED SHREDDED ALMONDS
CHOPPED CORRIANDER
BARBEQUE CHARCOAL

DOUGH MIXTURE
1) Mix spices 1tsp zahfaran, turmenric, salt, and Saudi spices together and rub with on the chicken on both sides with gloves. 
2) On medium high heat add 5tbsp oil and 4 chopped onions in a pan, and cook till golden brown.
3) Add golden onions in a metal pot, 2 cinnamon sticks, 5 pcs cardamom pods, 6 pcs cloves, 1½ tbsp salt, ½ cup yellow raisins, 3 cups washed & drained basmati rice, and warm water.
4) Stick your finger in the pot to make sure the water covers your index finger and mix it well.
5) Add metal rack on top of the rice, and add the chicken.
6) Let it cook on preheated oven at 185 degrees Celsius for 1 hour to 1 hour & 20 min.
7) Remove from the oven, add the chicken inside the rice pot.
8) Make a small plate/bowl from the aluminum foil, add it inside the pot, add little oil in the foil, and add the hot charcoal in the foil. 
9) Cover it quickly, and add clothe on top to seal the smoke for 10 to 15 minutes.
10) Remove the charcoal, and serve rice and chicken.
11) Sprinkle with roasted pine nuts, shredded almonds, and chopped coriander.

Delicious Potato and Cauliflower fried rice - Food with Chetna



This is a light and delicious rice recipe which is easy and quick to make. You can add other vegetables to this like carrots and beans. 

Enjoy it with some yogurt, chutney or pickle. 
This light and easy to make Aubergine and Red Onion tart is full of flavours. It is a fun and simple recipe to make and my kids love both making it and eating it!

How To Make Ghee Rice At Home



Learn how to make Ghee Rice an aromatic and delicious rice recipe by Anushruti only on Rajshri Food!

Ghee rice is best recipe due to its simple preparation and heavenly incomparable taste.It is Soothing yet flavorful so watch and learn to make Ghee rice with Anushruti only on Rajshri Food.

Ingredients
- 1 1/2 cup or 300gms of soaked rice
- inch piece of cinnamon
- 2 cloves
- seeds of 2 green cardamom pods
- ½ tsp of pepper cons
- 4tbsp of Ghee
- 2 tbsp of cashew
- 2 tbsp of raisins
- 1 Bay leaf
- 2-3 star anise
- 3-4 cloves
- inch piece of cinnamon
- ½ tsp of pepper cons
- couple of green cardamom pods
- 2tsp of ginger green chilli paste
- 2 ½ cup or 625gm of water
- 2 tsp of salt 

Method:
- Soak the rice in water

- Ground together cinnamon, cloves, seeds of green cardamom pods and pepper cons

- In a pan add ghee and roast cashew nuts and keep aside

- Then add some raisins roast them and keep aside

- In the same pan add Bay leaf, star anise, cloves, cinnamon, pepper cons, cardamom pods the grounded spices and ginger chilli paste.

- Add the soaked rice and mix well now add water and salt and let it cook for 12-15 minutes.

Vegetable Kurma #Recipe / Divine Taste With Anushruti

Ingredients: 
- 3 cups of fresh vegetables
fresh green peas
chopped carrots 
chopped beans
cauliflower florets
peeled and chopped potatoes
- 1 ½ cup of water
- dal chini
- 4 cloves 
- seeds of 2 cardomom pods
- ½ tsp of fennel seeds
- ½ tsp of cumin seeds
- 2tsp of coriander seeds
- ½ tsp of turmeric powder
- 1 tsp of red chilli powder
- green chillies
- 1inch of fresh ginger
- 2 tbsp of fresh coriander leaves 
- 1 cup of freshly grated coconut
- 2 tsp of poppy seeds
- 20 cashew nuts
- 3-4 chopped tomatoes
- water
- 4 tbsp of Oil 
- ½ tsp of yellow asafetida
- 11/2 tsp of salt

Method:
- In a utensil add fresh green peas, chopped carrots , chopped beans, cauliflower florets, peeled and chopped potatoes and water and cover the lid and cook until the vegetables are done.
- Grind together dal chini, seeds of 2 cardamom pods, cloves, cumin seeds, coriander seeds, turmeric powder and red chilli powder
- Add to it green chillies, ginger, coriander leaves , freshly grated coconut, poppy seeds, cashew nuts, chopped tomatoes and water
- Heat a pan and add oil and yellow asafetida then add the freshly ground masala paste.
- Add the vegetables and some water to it and cook well and add salt
- Vegetable Kurma is ready to be served!

Mediterroni Cocktail Recipe by Amit Adar



Amit Admar is bartender and manager at the renowned Claro restaurant and event complex in Tel Aviv. 
It is here that he is able to exercise his true passion for mixology, specialising in creating farm to table cocktails using only the highest quality, seasonal ingredients. 

Mediterroni recipe:
30 cl. Campari 
40 cl. Cinzano infused with roasted cardamom
30 cl. Tanqueray No.10 gin

Preparation: To create the cardamom infused Cinzano, roast fresh cardamom in a dry pan and add to the Cinzano. Leave to infuse for a minimum of 24 hours.
To create the cocktail, smoke rocks glass with fresh cardamom and leave to smoke while preparing the drink. Add all ingredients into a mixing glass and stir. To finish, pour the liquid into the glass and serve with a block of ice.

Acehnese Fish Curry Will Meyrick



Want to taste the delightful curry from Aceh? In this video Chef Will Meyrick shows you how to bring this delicacy to your home, an Acehnese Fish Curry with black grouper or black cod.
It is a simple recipe as it takes only 20 minutes to prepare. The curry is a mix of turmeric, garlic, red chili, pandan, curry leaves, cinnamon and white cardamom. Cook the potatoes, black grouper and coconut milk together with the curry until it becomes quite thick.

SPICED APPLE CAKE | VEGAN, OIL FREE & GLUTEN FREE



In a large bowl combine:
1 cup flour (use gluten free if necessary)
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp ginger
1 tsp cinnamon
sprinkle each of nutmeg, cloves & cardamom,
crack of salt
1/2 cup sugar
Combine well

In a separate smaller bowl mix 1 chopped apple and 1/2 tsp cinnamon together and add to the large bowl.

In the small bowl add 1/2 cup apple sauce, 1 tsp apple cider vinegar and 1/3 cup soy milk and whisk. Add it to the large bowl of ingredients and combine.

Pour mixture into a lined cake tin and bake in the oven on 180C fan forced for 40 minutes or until cooked through.
Allow to cool in tin, and then remove and place on a cooling rack to cool completely before slicing.

Juicy baked lamb meatballs recipe / Lamb kofta recipe

Ingredients: ( for lamb meatballs / lamb kofta )

500 gms - lamb mince
1/2 tsp turmeric powder
1 tsp chilli powder ( or paprika)
1 tsp - meat masala or garam masala
coriander powder - 1 tsp
fennel powder - 1 tsp
salt - 3/4 tsp (or to taste)
1 tbsp - chopped coriander leaves ( or parsley )
oil - 2 tsp

( note: if you like to make your own meat masala for this recipe, grind below spices :
1 red chilli, 1/2 tsp coriander seeds, 1/2 tsp fennel seeds, 1/4 tsp black pepper, 1 cardamom, 1 cloves, tiny cinnamon piece)

KARACHI BISCUITS

Ingredients

1½ cups margarine
1 teaspoon vanilla essence
1 cup powdered sugar
2 cups refined flour + for dusting
½ teaspoon green cardamom powder
25 grams chopped almonds
25 grams chopped cashewnuts
25 grams chopped pistachios

Method

1. Take margarine in a bowl and whisk using an electric beater. Add vanilla essence and powdered sugar and whisk well.
2. Add flour, cardamom powder, almonds, cashewnuts and pistachios and whisk well to make a dough. Wrap the mixture with a cling film and refrigerate for 30 minutes.
3. Preheat oven to 180° C.
4. Dust the worktop with some flour. Transfer the dough and roll into a thick log.
5. Trim off the ends and wrap the log with cling film. Freeze for 15-20 minutes.
6. Cut into medium thick roundels, place on the tray, put the tray in the preheated oven and bake for 15 minutes. Remove from heat and cool. 
7. Serve or store in an airtight container.

1 cup vanilla Greek yogurt
½ cup peaches, chopped and frozen

2 cups vanilla Greek yogurt
1 double shot espresso, cooled
½ cup chocolate

Cherry Cheesecake FroYo
2 cups vanilla Greek yogurt
4 tbsp cream cheese
1 cup cherries, frozen
¼ cup graham crackers

Key Lime FroYo
2 cups vanilla Greek yogurt
½ cup key lime juice
1 key lime, zested
¼ cup graham crackers
